If all of your artwork is (and is being printed in) one spot color then sending a grayscale image to print is perfectly ok. You just need to tell the printer which color/ink you want. You can change the color using Illustrator's Recolor Artwork though:
CMYK Colour model files combine Cyan, Magenta, Yellow and Black ink colours, giving you stunning full-colour prints. We recommend setting your artwork files to CMYK when you first set up your files. If you plan to design print files with Adobe InDesign and Illustrator, you need to select the Print option, as this will convert any RGB colours. Photoshop is good not only for saving PDF files in CMYK, but also for converting your images to CMYK. To create a new CMYK document in Photoshop, go to File > New. In the new document window, simply change the color mode to CMYK (Photoshop’s default is RGB). If you want to convert an image from RGB to CMYK, open the image in Photoshop. The typical way to change colour modes in Photoshop is to manually select Image>Mode>CMYK Color, however, as all Adobe applications use the same colour engine, you can perform an RGB to CYMK

This process also works in reverse (CMYK to RGB): Go to File » Document Color Mode and check RGB. Select everything in your document and go Filter » Color » Convert to RGB. A good way to check what colours are being used in your document is to: Open up the colour palette.

Feb 16, 2012. Hi, You need to go File > Export. Then select PDF. In the PDF export settings you'll have to select the 'Output' tab. Here it becomes important what you select (depending on the colors you want in your resulting PDF). For CMYK only, select 'Convert to Destination (Preserve Numbers)'.
